Gluten-free Dairy-free Waffles

1 cup unsweetened almond milk

2 tsp apple cider vinegar

2 cups finely ground almond flour

1 cup tapioca flour

1 tbsp baking powder

1 tsp salt

3 eggs

1 Foodie Cube, fruit or veggie flavor, melted

¼ cup coconut sugar

1 tsp vanilla extract

½ cup coconut oil, melted

coconut oil spray for your waffle iron

Preheat the waffle iron. Mix the almond milk with the apple cider vinegar, set aside and allow to coagulate. In a large bowl, place the almond flour, tapioca flour, baking powder and salt.

Beat the eggs with an electric mixer until pale yellow and the volume has increased. Add the Foodie Cube, coconut sugar and vanilla extract and mix again. Next, add the almond milk/vinegar mixture and coconut oil and mix until well combined.

Add the wet mixture to the dry one and whisk to combine.

Bake the waffles to your liking and allow to cool on a cooling rack. Serve with your favorite toppings like maple syrup, fresh fruit, nuts, coconut whipped cream etc.

Makes 6 to 8 waffles
